Jamaican Jerk Pot (serves 4-6)
(This is a great make ahead recipe for buffets as the
flavours improve by the second day)
1 tablespoon olive oil
1lb Great Tasting Meat Beef Casserole Steak
2 teaspoons hot jerk seasoning
1 onion sliced
1 medium squash peeled and diced
1 green pepper sliced
1 inch fresh ginger chopped finely
15 oz can chopped tomatoes
Half pint beef stock
2 oz split red lentils
12 oz can sweetcorn
Salt and fresh ground pepper
1. Rub the beef with the jerk seasoning and in a large pan fry in the hot oil until crusty and golden. Add the onion, squash, and green pepper for a few minutes, then add the ginger, stock, tomatoes and lentils.
2. Transfer to the slow cooker and cook on HIGH for 4 hours or LOW for 6 hours. Add the sweetcorn for the final 30 minutes. Season and serve.
